Is it just me, or did mid-August sneak up on us?!
One minute we’re talking about summer vacation and lazy evenings, and the next we’re looking at school calendars, activities, practices, appointments, and ALL THE THINGS.
I’m doing my best to squeeze every last drop out of summer before that happens. For me lately, that means family fun, evenings on the porch, a glass of wine, and trying very hard not to look too closely at the calendar. 😂
But since National Fajita Day is here, I figured it was a good time to talk about an easy dinner that can help when that calendar inevitably starts filling up.

It’s National Fajita Day, so of course we need to celebrate!
And one of my favorite ways to do that is with a One Pan Fajita Dinner.Because when school starts and everyone’s schedules start going in 47 different directions, I don’t want complicated.
I want:
One pan.
Easy prep.
Big flavor.
Dinner on the table.
That’s my kind of back-to-school meal!

It’s a perfect option for those nights when you’ve got someone heading to practice, someone coming home from work, homework happening at the kitchen table, and everyone asking the most important question of the evening:
“What’s for dinner?”

Let Your Calendar Plan Dinner
Back-to-school calendars can get CRAZY.
One of my favorite little tricks is to make your family calendar do double duty.
Once a week, sit down and look at everyone’s schedule before you plan your meals.
Then identify:

🍽️ Easy Nights:
Who’s home for dinner? These are your nights to actually cook.
🚗 Crazy Nights:
Practice, appointments, activities, late work nights? Plan something quick.
🥡 No-Cook Nights:
Give yourself permission to use leftovers, sandwiches, freezer meals, or takeout.
And here’s the important part:
Don’t plan your hardest meal on your busiest night.
It sounds obvious, but sometimes we plan dinner based on what sounds good instead of what actually fits our calendar.
Your schedule should help determine your dinner—not the other way around!

Squeezing In the Last Sips of Summer
Right now, I’m trying to soak up these last few weeks of summer.
I’ve been squeezing in as much family fun as I can, and one of my favorite places to do it is right on my own porch—with a glass of wine and the people I love.
There’s something about those summer evenings that makes you want to slow down.
Laugh a little longer.
Stay outside a little later.
And pretend that back-to-school isn’t coming quite so quickly. 😂
Because honestly…doesn’t it seem like school starts earlier every year?!
I know that once those school bells ring, our calendar is going to fill up fast.
Which is exactly why I’m already looking ahead.
I’ve got a Meal Prep Experience on the calendar for next week, and I’m pretty excited about it. There’s nothing like having a few meals prepared and ready to go when life gets busy again.
So for now, I’m going to keep enjoying the porch, the family time, the sunshine, and maybe one more glass of wine.

Because summer isn’t over yet.
And I’m going to squeeze every last drop out of it. ❤️
