If you’ve been around Cathy’s Kitchen for any length of time, you’ve probably heard me rave about Dried Tomato & Garlic Pesto Mix.
It’s one of those pantry staples I never like to be without because it’s incredibly versatile.
During the summer, I use it to make my favorite cold pasta salad. It’s perfect for cookouts, graduation parties, picnics, and easy lunches
Then, when the weather turns chilly, I make the exact same recipe and serve it warm! The red tomatoes and green spinach make it a beautiful addition to any holiday table, making it one of my favorite Christmas side dishes.
The best recipes are the ones that work year-round, and this one has become a tradition in my kitchen.

Can I share one of my favorite holiday secrets? The less I leave until December…the more I actually enjoy December. That’s why I’m embracing Christmas in July!
This week, challenge yourself to do just ONE thing for the holidays:
๐ Buy one Christmas gift.
๐ Start a gift tote or closet.
๐ Pick up wrapping paper or gift bags while you see a good deal – I often find them at garage sales or thrift stores.
๐ Keep a note in your phone when someone mentions something they’d love.

Tiny steps now make the holiday season feel so much less stressful later. Future You will be so glad you started early!
